Answer:

Hi Vittoria, thank you for contacting me for the recipe I always love helping people to eat healthier. :) So if you cook for two persons the things you need are:

*one eggplant

* quinoa (as much as you like)

* a few mushrooms

*fresh spinach

* onion, garlic, salt and pepper 

* cashew nuts 

* tempeh (It’s a soy product traditionally from Indonesia, you can use it as a little extra)

 

So, it’s actually very simple, but it takes a little time to prepare this dish. So basically you start with steaming the eggplant above a pan of boiling water, after 5-10 min you cut them in half and spray with olive oil, and bake them in the oven for about 10 minutes. (200 degrees Celsius). Right now you can remove the inside of the egg plant very easy, so that only the skin remains. Fry in a frying pan the onions garlic together with the flesh of the eggplant and the mushrooms and add the spinach last. Place everything in the skin, add cashew nuts and salt and pepper and finish it off with about 10 minutes in the oven.

For the quinoa you just follow the instructions on the pack and use fresh taugé for the topping. The tempeh is a little harder, but you just have to practice. Take oil (like Ghee butter or sunflower oil) make sure it’s really hot and than sort of fry the tempeh. Its not that healthy but if you take ghee butter for the frying and don’t eat loads it will be fine! (its basically just soy so it will do you no harm, only the frying isn’t that healthy).
